A little about us and our food
Mark & Corinne Gautier's passion is food; their recipes come from their families, the dishes of their childhood.
Mark followed in his father's footsteps, a chef from Nice. He started at the age of 11 in the kitchen of his mother's restaurant, went on to train professionally and has worked extensively in both the Uk and France at all levels including 3star michelin in both countries.
He has also taught professionally at the two best catering schools in London, teaching many of today's up and coming new chefs, training the chefs for Jamie Oliver's first '15' restaurant & mentoring the 2004 'Young Chef of the Year'.
Corinne comes from a truely gourmet family from the Languedoc region, discovering the pleasures of the palette from a very early age; in Mark she found someone with whom she could recreate the lost dishes of her grandmother and mother, heavenly!
Together, they created Madame Gautier ~TRAITEUR~ bringing these pleasures to you! Lovingly offering high quality food to their customers.
Our Ethos
When we first decided to create Madame Gautier, it seemed obvious to consider opening a shop, however we wanted to reach a greater customer area. We also wanted to trial our food and reassure ourselves that it was an offer people wanted.
We regularly bought our weekly food from Farmers Markets and were aware of the quality of produce on offer. It seemed the ideal option for Madame Gautier and in keeping with the tradition of Traiteurs at markets in every village in France.
We have gone from strength to strength, customers returning every week, buying meals for the whole family on a weekly basis, some upto five meals a week! and calling us for their special orders, so we now offer a home delivery service too.
The ethos of the Farmers Markets is for small & local producers to sell their produce directly to the public, this fits with our aim to source good quality local ingredients for our dishes. Many of the farmers and producers are now trusted and valued suppliers.
Our food
Our food is about texture and flavour, over the years we have trialed and tested our suppliers to ensure freshness, great quality and fantastic flavour, as well as being ethically cared and loved for. We now have a fantastic list of suppliers we trust and who know our exacting criterias and ensure they are met. (Maybe it's because we pay them on time too!)
We, in turn prepare our food with passion, love and time, the best way to get the great tastes we want.
We respect the classic recipes, follow the respected methods and most importantly
take time: our lentils take two days to create, our stocks and sauces three days!
We create the very best of great home cooking to professional standards.
All our food is handmade by us using natural ingredients.
And because our food is so fresh, you can keep it refrigerated for three to seven days depending on the dish and most can be frozen.
Our Ethics
We endeavour to be a 'green' traiteur.
Our produce is carefully selected, wherever we can, locally sourced and seasonal, it has been loved and cared for ethically and we do the same in preparing our dishes. Our food is chemical free and natural.
Our kitchens use green electricity and recycling systems.
Our packaging is kept to a minimum. We make every effort to use recyclable and bio-degradable packaging. We prepare meals in terracottas dishes that you pay a refundable deposit for and return whenever suitable! We've all recycled and you have a meal to simply pop in the oven or the microwave!
And we're having Madame Gautier ~TRAITEUR~ shopping bags made so no more need for plastic or paper bags and when they are worn out we'll swap them for a new one!
Finally we do charitable work with schools, educating children on quality food, where to buy it and how to cook it.
